2/3 cup grated sweet potato
1/2 cup grated carrot
1/2 cup grated zucchini, squeeze to remove excess water
1/2 cup green peas
1/2 cup almond meal
Place all ingredients, except for the coconut oil, in a bowl and combine. Spoon out some of the mixture and make patties the size of your palm.
Heat a frying pan on medium heat and add 1-2 tablespoons of coconut oil. Place 2 or 3 patties in the frying pan and cook for 3-4 minutes on each side until browned and cooked through.
