Sunbutter And Jelly Energy Balls

INGREDIENTS:

  • 2 cups raw cashews

  • 1 cup soft Medjool dates, pitted

  • 1 heaping tablespoon Sunbutter

  • 1 teaspoon vanilla extract

  • 1 teaspoon sea salt

  • 1 tablespoon Strength of Samson

  • 1/2 cup raw sunflower seeds

  • 1/2 cup dried blueberries

INSTRUCTIONS:

  1. Place all ingredients into a food processor, (reserve sunflower seeds and dried blueberries for later use). Pulse mixture into a crumbly texture. Then, continue to process until a smooth consistency is reached. 

  2. Add the sunflower seeds and blueberries into the mixture and pulse a few times to combine, leaving the berries and seeds mostly intact. 

  3. Measure out 1 tablespoon of the mixture and roll into a ball.

  4. Refrigerate until firm or freeze for longer storage.
