Turmeric Almond Energy Balls

INGREDIENTS:

  • 2 cups raw almonds, soaked for 15 min

  • 2 cups soft Medjool dates, pitted

  • 1 tablespoon chia seeds + more for garnish

  • 2 tablespoons raw honey

  • 2 tablespoons lemon zest

  • 1 tablespoon turmeric

  • 1 tablespoon coconut oil

  • 1 teaspoon sea salt

  • 3-5 grinds of fresh black pepper

INSTRUCTIONS:

  1. Soak almonds in filtered water for 15 minutes, rinse and air or towel dry. 

  2. Place almonds into a food processor and pulse into a crumbly texture. 

  3. Add dry ingredients and process to combine. 

  4. Add dates plus remaining wet ingredients and process until desired consistency is reached. 

  5. Measure out 1 tablespoon of the mixture and roll into a ball. Dust tops of energy balls with chia seeds. 

  6. Refrigerate until firm or freeze for longer storage.
