Dairy-Free Spinach & Veggie Dip

TIME: 20 MIN | YIELD: 6 CUPS

INGREDIENTS:

  • 1 (10 ounce) package frozen, chopped spinach (defrosted and squeezed dry)

  • 2 cups Vegenaise (soy-free) or Homemade Mayonnaise

  • 2 cups Homemade Cashew Sour Cream

  • 1 (3 oz) package of dried vegetable soup mix (find in bulk section of natural grocery store)

  • 1 can water chestnuts, drained and chopped

  • 3 green onions, chopped

ADDITIONAL SEASONINGS IF SOUP MIX IS SALT AND SEASONING FREE:

INSTRUCTIONS:

  1. Defrost spinach and place in either cheesecloth or paper towel. Wring out as much liquid as possible.

  2. Combine spinach with all remaining ingredients and let set in refrigerator for 2 hours.

  3. After chilling, adjust consistency if needed by adding additional Vegenaise/Homemade Mayo or additional seasonings to your preference.

  4. May serve cold or best warmed in oven and paired with a platter of your favorite vegetables, homemade bread, or flax crackers.
