Dairy-Free Spinach & Veggie Dip
YIELD: 6 CUPS | TIME: 20 MIN
1 (10 oz) package frozen, chopped spinach (defrosted and squeezed dry)
1 (3 oz) package of dried vegetable soup mix (find in bulk section of natural grocery store)
1 can water chestnuts, drained and chopped
3 green onions, chopped
Additional seasonings if soup mix is salt and seasoning free:
Defrost spinach and place in either cheesecloth or paper towel. Wring out as much liquid as possible. Combine spinach with all remaining ingredients and let set in refrigerator for 2 hours. After chilling, adjust consistency if needed by adding additional Vegenaise/Homemade Mayo or additional seasonings to your preference. May serve cold or best warmed in oven and paired with a platter of your favorite vegetables, homemade bread or flax crackers.
