Lemon Parsley Marinade

TIME: 5 MIN | YEILD: 1/2 CUP

INGREDIENTS:

  • 1 lemon, juiced (approximately 1/4 cup)

  • 1/4 cup olive oil

  • 2 cloves garlic, minced

  • 1/4 cup parsley, finely chopped

  • 1 teaspoon dijon mustard

  • 1/2 teaspoon sea salt

  • 1/4 teaspoon black pepper

INSTRUCTIONS:

  1. In a small jar combine all ingredients and either stir well or close with a lid and shake until well combined.

  2. Pour marinade over fish such as wild caught mahi or salmon and bake for 15 to 20 minutes at 350. For a vegetarian option, toss potatoes or cauliflower with the marinade and roast until tender.

  3. Keep a few tablespoons of sauce to pour over baked fish or cooked vegetables before serving. Makes enough marinade for 6 fillets of fish, or a medium baking tray of roasted vegetables.
