Garlicky Kale Salad

TIME: 20 MIN | SERVINGS: 6

INGREDIENTS:

  • 2 bunches of kale

  • 2 tablespoons tahini

  • 2 tablespoons lemon juice

  • 2 tablespoons raw apple cider vinegar

  • 2 tablespoons tamari or Bragg’s Liquid Aminos

  • 2 cloves garlic, minced/crushed

  • 4 tablespoons nutritional yeast

  • 1 tablespoon hemp seeds for garnish

  • Roasted beets (optional)

INSTRUCTIONS:

  1. Wash kale and de-stem the leaves.

  2. Chop leaves into small bite-size pieces and place in a large bowl.

  3. Combine remaining ingredients except hemp seeds in a small bowl for the dressing and pour over the chopped kale.

  4. Toss the salad, gently massaging the dressing by hand into the kale.

  5. Serve garnished with a dusting of hemp seeds and nutritional yeast.

  6. Delicious, especially when paired with this recipe for roasted beets.
