Roasted Beets are my absolute favorite, and my daughter Naomi's too! These are great on top of a salad, as a side dish for dinner, or by themselves as an afternoon snack.
Olive oil (enough to coat the beets)
Coarse sea salt
Fresh ground pepper
Rinse 4-5 like sized beets well and pat dry.
Rub each beet down with olive oil, coarse sea salt and fresh ground pepper.
Bake at 400 degrees for approximately 1 hr.
*Cooking time will vary depending on size of beet. Beets are ready when easily pierced with a fork.
Remove from oven and allow to cool.
Optional to leave skins on or remove. Slice and toss with your favorite olive oil and balsamic vinegar.
Enjoy alone, as a side dish or on salad greens.
