Roasted Beets


Roasted Beets are my absolute favorite, and my daughter Naomi's too! These are great on top of a salad, as a side dish for dinner, or by themselves as an afternoon snack.



  • Beets

  • Olive oil (enough to coat the beets)

  • Coarse sea salt

  • Fresh ground pepper



  • Rinse 4-5 like sized beets well and pat dry.

  • Rub each beet down with olive oil, coarse sea salt and fresh ground pepper.

  • Bake at 400 degrees for approximately 1 hr.

  • *Cooking time will vary depending on size of beet. Beets are ready when easily pierced with a fork.

  • Remove from oven and allow to cool.

  • Optional to leave skins on or remove. Slice and toss with your favorite olive oil and balsamic vinegar.

  • Enjoy alone, as a side dish or on salad greens.
