Garlicky Kale Salad

Yield: 6 servings Time: 20 minutes

 

Ingredients:

  • 2 bunches of kale

  • 2 tablespoons tahini

  • 2 tablespoons lemon juice

  • 2 tablespoons raw apple cider vinegar

  • 2 tablespoons tamari or Bragg’s Liquid Aminos

  • 2 cloves garlic, minced/crushed

  • 4 tablespoons nutritional yeast

  • 1 tablespoon hemp seeds for garnish Roasted beets *Optional

 

Directions:

Wash kale and de-stem the leaves. Chop leaves into small bite-size pieces and place in a large bowl. Combine remaining ingredients except hemp seeds in a small bowl for the dressing and pour over the chopped kale. Toss the salad, gently massaging the dressing by hand into the kale. Serve garnished with a dusting of hemp seeds and nutritional yeast. Delicious, especially when paired with this recipe for roasted beets!
