Cauliflower Mash

We love this lighter alternative to mashed potatoes. Onion, garlic, and chives are what gives this recipe its delicious flavor. Try it at your next family dinner or holiday gathering and see if people can taste the difference.

INGREDIENTS:

  • 1 head cauliflower, chopped into florets

  • 1/4 head green cabbage, quartered

  • 1/2 medium onion, quartered

  • 4 cloves of garlic

  • 3 tablespoons butter, ghee, or coconut oil

  • 1 teaspoon sea salt

  • 1/2 teaspoon black pepper

  • Chives for topping (optional)

INSTRUCTIONS:

  1. Place cauliflower florets, cabbage, onion, and garlic in the steamer basket of a large pot. Bring water to a low boil and steam until cauliflower is very tender and easily falls apart to the touch. Remove from heat and allow to cool enough to handle.

  2. Add steamed cauliflower mixture and all remaining ingredients into a food processor or a high-speed blender and blend until smooth. This may take a few minutes to produce a very smooth texture.

  3. Season with any additional butter, salt, and pepper to taste. Serve immediately, or pour the cauliflower mash into a casserole dish and warm in the oven prior to serving. Top with cut chives.
