- 1 tablespoon of oil (coconut, ghee, olive, or avocado)
- 2 eggs
- 1 teaspoon Italian seasoning
- 1 teaspoon of Nutritional Yeast
- pinch of salt
- 1/2 cup chopped vegetables (asparagus, spinach, broccoli, cauliflower, mushrooms, green onions, red peppers, jalapenos, tomato, etc.)
Combine eggs, Italian seasoning, Nutritional Yeast, and salt into a cup and mix until blended. Add oil to pan and heat on medium/low. Pour egg mixture into the pan and then add vegetables. Cook until edges are firm, then fold in half into an omelet. Top with fresh tomatoes or sliced avocado. Voila!
