Cream of Broccoli Soup

We love eating clean soups! Most soup you buy at the store or in a restaurant is loaded with cream, sugar and condensed milks. Here is a fun alternative to your standard cream of broccoli soup that is made entirely from vegetables! Enjoy it as is or use it in your favorite recipe calling for creamed soup.



  • 2 medium onions (chopped)

  • 2 cloves garlic (minced)

  • 2 Tbsp olive oil

  • 1 Tbsp thyme

  • 1 Tbsp oregano

  • 1 large head of cauliflower

  • 4 cups liquid (preference is 2 cups water & 2 cups chicken broth – any combination will work)

  • 5 cups of finely chopped broccoli

  • 1 can coconut milk (light or full fat)

  • 2 Tbsp Nutritional Yeast

  • 1 Tbsp onion powder

  • 1 tsp sea salt

  • 1 tsp pepper (white or black)



  • In a large stock pot, sauté chopped onion and minced garlic in olive oil until translucent. Add in thyme & oregano and stir to combine.

  • Cut cauliflower head into pieces and add to the pot.

  • Cover with the 4 cups of water &/or chicken broth and simmer until cauliflower is tender.

  • Let soup mixture cool and then pour into a blender or use an immersion blender to make a creamy consistency. Pour creamy cauliflower soup back into the pot and place on low heat.

  • Add broccoli, coconut milk, nutritional yeast, onion powder, sea salt, black pepper and cover with lid. Stir and keep on low heat until broccoli is tender. Adjust seasonings to taste.
